Mediterranean Quinoa Bowl

Ingredients

  • 1 cup quinoa
  • 2 cups vegetable broth
  • 1 cucumber diced
  • 1 cup cherry tomatoes
  • 1/2 red onion
  • 100g feta cheese
  • 1/4 cup kalamata olives
  • 2 tbsp olive oil
  • juice of 1 lemon
  • fresh parsley
  • salt & pepper

Instructions

Rinse quinoa under cold water. Cook in vegetable broth for 15 minutes until fluffy.

While quinoa cooks, dice cucumber, halve cherry tomatoes, and thinly slice red onion.

In a large bowl, combine all vegetables with the cooled quinoa.

Drizzle with olive oil and fresh lemon juice. Season with salt and pepper.

Top with crumbled feta cheese, olives, and fresh parsley. Serve immediately.
